Breakfast Stuffed Peppers


Ingredients
  • 1 bell pepper halved, middle seeds removed
  • 4 eggs
  • 1 tsp olive oil
  • 1 pinch salt and pepper
  • 1 pinch sriracha flakes for a bit of spice, optional


Instructions
  1. Cut bell peppers in half lengthwise and remove seeds and middle leaving the edges intact like bowls.
  2. Use your finger to rub a bit of olive oil just on the exposed edges (where it was cut).
  3. Crack two eggs into each bell pepper half. Sprinkle with desired spices.
  4. Place them on the air fryer basket
  5. Preheat the air fryer oven for about 3 minutes
  6. Cook them at 390 degrees for 13 minutes (times will vary slightly according to how well done you like your egg ).
  7. Alternatively, if you'd rather have your bell pepper and eggless brown on the outside add just one egg to your pepper and set air fryer to 330 degrees for 15 minutes.
