SALSA FRESCA CHICKEN BAKE

 SALSA FRESCA CHICKEN BAKE INGREDIENTS 2 lbs chicken breast, boneless and skinless 1/4 teaspoon cumin 1/2 teaspoon salt, divided 1/4 teaspoon black pepper 1/4 teaspoon garlic powder 1/4 teaspoon red chili pepper flakes 2 cups diced grape or Roma tomatoes 1/2 cup chopped onion 1/3 cup chopped jalapeño 1/2 fresh chopped cilantro 1/2 lime, juiced 1 cup shredded Mozzarella DIRECTIONS 1. To make the salsa Fresca chicken bake: Preheat the air fryer oven to 400˚F (200ºC). Chop chicken breasts into small pieces. In a salad bowl, combine tomato, onion, jalapeño, cilantro, and lime juice with 1/4 teaspoon salt. 2. Arrange the chicken pieces flat in a large baking dish and season evenly with cumin, garlic, red chili pepper flakes, salt, and pepper. Give a quick stir to combine chicken evenly with seasoning. Cover chicken pieces with the diced tomatoes, onion, and jalapeño, then top with shredded mozzarella. 3. Bake the salsa Fresca chicken on the middle rack for 25  – 30 minutes or until chicken

Air Fryer Egg Bites

Air Fryer Egg Bites Ingredients 4 eggs 4 tsp milk 1/2 onion diced 1/2 small bell pepper diced 4 strips bacon cooked and crumbled 1/4 c cheese shredded salt and pepper Instructions Place 4 silicone cupcake holder into your air fryer basket. Crack 1 egg into each one, then add 1 tsp milk into each one. Top each one off with some diced onions, green pepper, bacon bits, and cheese. Sprinkle a bit of salt and pepper on the top. Air fry at 300 degrees for 10-13 minutes or until lightly browned on top and enjoy!

Easy Air Fryer Omelette

Easy Air Fryer Omelette Ingredients 2 eggs 1/4 cup milk Pinch of salt Fresh meat and veggies, diced (I used red bell pepper, green onions, ham, and mushrooms) 1 teaspoon McCormick Good Morning Breakfast Seasoning – Garden Herb 1/4 cup shredded cheese  Instructions In a small bowl, mix the eggs and milk until well combined. Add a pinch of salt to the egg mixture. Add your veggies to the egg mixture. Pour the egg mixture into a well-greased 6″x3″ pan. Place the pan into the basket of the air fryer . Cook at 350º Fahrenheit for 8-10 minutes. Halfway through cooking sprinkle the breakfast seasoning onto the eggs and sprinkle the cheese over the top. Use a thin spatula to loosen the omelet from the sides of the pan and transfer to a plate. Garnish with extra green onions, optional

Air Fryer Mushrooms

Air Fryer Mushrooms Ingredients 7 oz 200 grams chestnut mushrooms 2 tsp vegetable oil 2 tsp low sodium soy sauce or tamari sauce 1 sprig rosemary ½ tsp salt and pepper Instructions Cut the mushrooms into thick slices,  cut each into 2 halves but if it’s too big then cut into smaller pieces. Try to make the size of the slices even so everything cooks evenly. In a white bowl, toss the mushrooms with the rest of the ingredients so everything is well coated in soy, oil, and seasonings. No need to preheat the Air Fryer . Place the mushrooms directly into the Air Fryer basket, and cook at 356F for about 15 minutes flipping halfway through. Open the Air Fryer basket and check every 5 minutes, shake the basket and decide how much longer you would like to cook the mushrooms for. The mushrooms should be cooked well, but not dried out or burnt. So make sure not to overcook them. Serve with some extra sea salt flakes, and red chili flakes if desired.
